This is a dry white wine with a strong and often dense character that we cultivate on this limestone soil. A rocky and fleshy, fiery aromatic nose, a salivating, powerful length on citrus zest, bitterness, and a strong saline imprint define the palate. This is a wine that can be slightly reduced in some years. In warmer vintages, its powerful body is carried by a long acidity that structures the wine and brings spice, cedar, as well as a resinous and iodized side to the material. For a young vintage, decanting for a few hours is recommended.

The grapes come from a unique geographical site considered to be one of the hottest in Alsace. Some old-timers called it "Little Senegal."
This vineyard, whose soil is primarily limestone, is located in the middle of a rocky cirque, protected from north and east winds. Open to the south, the grapes ripen exceptionally well there.

Winemaking
Winemaking
Harvesting is 100% manual. Our approach remains traditional. The grapes are pressed whole for approximately 6 hours in our pneumatic presses. Debourbage is natural. Fermentation starts spontaneously with the natural yeasts in a small, century-old foudre. This is followed by aging on fine lees for several months, until bottling, which usually takes place during the summer. Before bottling, the wine is filtered. It can be re-adjusted with sulfur, if necessary, at that time.

This wine will perfectly accompany fish and seafood (as well as Alsatian dishes). Japanese cuisine, tartares and ceviches based on fatty fish, and iodized flavors will highlight its minerality.
