Following very specific climatic conditions (morning mists) from mid-October, the grapes reach significant levels of over-ripeness due to raisining and noble rot. In this case, Botrytis cinerea penetrates the grape berry to feed on its pulp, thus concentrating acids and sugars to cause the drying of the berry. This destruction, instilled at the very heart of life, actually transforms the grape towards a form of eternity. This is perhaps why this rot is called noble. Harvested by successive selective pickings from late October to late November, these grapes produce rare wines born from a transfigured life. They are true masterpieces.
