The nose, velvety and full, combines white pepper and sweet spices with notes of small berries, picked in the cool morning air. The palate is luscious, lively, and digestible with supple tannins and nuances of red fruit.

Terroir

The grapes primarily come from vineyards located on a large marl-limestone terroir in Hengst, supplemented by an old-vine plot from a gravel terroir. The cuvée is 100% Pinot Gris, AOC Alsace. Since 2004, the entire vineyard has been organically and biodynamically farmed.

Winemaking

The grapes were destemmed before macerating for about ten days, a duration that places this Pinot Gris in the family of macerated wines, known as orange wines. Aging lasted over a year in a small, new wooden foudre. The wine has an alcohol content of 12.5% vol. and contains sulfites.

Tasting and Pairings

The estate describes a velvety and full nose, combining white pepper and sweet spices with notes of small berries, picked in the fresh morning air. The palate is dynamic and easy-drinking, with supple tannins and nuances of red fruits. The official tasting note evokes "the story of a white wine that dreams of being vermilion," crunchy like a cherry and lively like a young star. The tannins are melted, a few bursts of white pepper and a fresh, sappy, vegetal note make the finish dance. The announced aging potential is 3 to 5 years.
