This great dry wine, for the most part, is characterized by its power and density on the nose.

It features fruit notes combined with a smoky and sometimes sanguine aspect, always imbued with a strong and fiery character. The palate is fleshy, full-bodied, carried by fruit, but also by roasted and grilled notes linked to an acidity that lengthens the structure and asserts the originality of this Pinot Gris. Some vintages will be almost gamey with aromatics close to a red wine, while others, driven by the pure granite structure, will be firm, slender, made of cedar wood, sap, and spicy salt. Evolution will determine their true natures. Depending on the vintage, they will become flesh or mineral.

Terroir

This is an intimate cuvée because we only have two small plots located on this Grand Cru. This great granitic terroir is located in the commune of Turckheim and is south, south-east facing.

Its total area is 57 hectares and it culminates at 380 meters. The grape variety planted is mainly Riesling, which gives it a masterful expression. This terroir rests on a granite substrate, a rock composed of quartz, feldspar, and mica, offering a sandy and coarse soil. The Turckheim granite is composed of two micas of varying fineness. This type of subsoil has a warming effect at the root level, promoting good grape ripening and the combustion of malic acid. It also creates a microclimate from the heat stored on the surface by its small stones.

Winemaking

The harvest is 100% manual.

Our approach remains traditional. The grapes are pressed whole for approximately 7 hours in our pneumatic presses. Debourbage is natural. Fermentation starts spontaneously with the yeasts from the environment in a century-old foudre. It is followed by aging on fine lees for several months, until bottling, which usually takes place in July.

Before bottling, the wine is filtered. It can be readjusted with sulfur, if necessary, at that time.

Tasting and Pairings

This wine will be an excellent partner for all gastronomic cuisine related to poultry, small feathered game, rabbit, and other strong-flavored meats. Full-bodied dishes combining mushrooms, truffles, root vegetables, sometimes sweet and savory, may also suit it. Thai cuisine will also be a good match.
