This great dry-style white wine is mainly defined by the finesse of its acidity, supported by the very old vines in this plot. Its firm and taut structure contrasts with the natural breadth of the grape variety. In cold vintages, there are aromas of white flowers, sometimes aniseed, aromatic herbs, and white fruits. The finish is always saline and can evolve towards more earthy, grilled, or even roasted notes in warmer vintages. For a young vintage, decanting is recommended.

Only one plot makes up this cuvée. These are the oldest vines on the estate. It is located on the plain, on the edge of Wintzenheim and consists of gravelly soil.

Winemaking
Winemaking
The harvest is 100% manual. Our approach remains traditional. The grapes are pressed whole for approximately 6 hours in our pneumatic presses. Settling is natural. Fermentation starts spontaneously with ambient yeasts in a small century-old foudre. It is followed by aging on fine or total lees for several months, until bottling which usually takes place during the summer. Before bottling, the wine is filtered. Sulfur can be readjusted, if necessary, at that time.

This wine will wonderfully accompany dishes that showcase both land and sea. Cereals and creamy risottos will suit it perfectly. Foie gras, guinea fowl, or rabbit with a few notes of dried fruit, white meat in sauce, or more unusually, a Thai salad seasoned with toasted sesame, garlic, and soy sauce will make it sing.
