The nose is dense and complex with delicate notes of bitter orange, apricot, and rose petal. The palate reveals aromatics linked to the grape variety, but also a firm, saline tannic structure that pushes the wine towards new horizons. Despite its character, the wine remains digestible and refined, with a long finish and beautiful bitterness intertwined with sweet spice and floral infusion.

The grapes come from two plots of vines. The first is located on a magnificent granite terroir. The second comes from old vines located on gravelly soils.

Harvesting is 100% manual.
One third of the grapes are whole-bunch pressed by foot and the remaining two thirds are destemmed. The whole macerates for one month. Fermentation starts spontaneously with ambient yeasts in a stainless steel tank with a floating cap. The fermenting must will be punched down 1 to 2 times a day during the first week. A delicate and rapid pressing concludes this stage. Aging takes place in stainless steel tanks without sulfur.
Depending on its balance, it may be lightly sulfured and filtered before being bottled.

Despite its character, the wine remains digestible and refined, its length stretching out on beautiful bitters where sweet spice and floral infusion mingle.
This wine will pair beautifully with dishes combining sea and land, such as a paella with saffron and cockles, a smoked fish with a few notes of Szechuan pepper, or a moderately strong washed-rind cheese.
